Ingredients
  • Chicken Stir-Fry
  • 2 chicken breasts (about 400g, cut into strips)
  • 2 cups broccoli florets
  • 1 large carrot (sliced)
  • 1 bell pepper (sliced)
  • 1/2 onion (sliced)
  • 2 tbsp soy sauce
  • 1 tbsp olive oil
  • 2 cloves garlic (minced)
  • 1 tsp grated ginger
  • 1/4 cup water
  • Salt and pepper to taste
  • Optional garnish: sesame seeds (chopped green onions)
Instructions
  1. Prep the chicken and vegetables: Slice chicken breast into strips. Prepare vegetables by chopping broccoli, carrots, bell pepper, and onion.
  2. Cook the chicken: Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add the chicken strips, seasoning with salt and pepper, and cook for 5-7 minutes until golden brown and cooked through. Remove from the pan and set aside.
  3. Sauté the vegetables: In the same skillet, add the sliced onions and garlic. Cook for 1-2 minutes until fragrant. Add the broccoli, carrots, and bell pepper. Stir-fry for 5-7 minutes, until the vegetables are tender but still crisp.
  4. Combine everything: Add the chicken back into the skillet with the vegetables. Pour in soy sauce, grated ginger, and water. Stir everything together and cook for an additional 2-3 minutes to combine flavors.
  5. Serve: Divide into 4 portions. Optionally garnish with sesame seeds or green onions for added flavor.
